Poached Pears with Burratta
We ran across this at a friend's restaurant (Vesta restaurant in Redwood City -https://g.co/kgs/4bYtRBL). It's actually VERY simple to make, with a little pre planning.
Ingredients:
- one pear
- burratta cheese
- bottle of white wine (or red)
- balsamic vinegar glaze
- kosher salt
1. Peel, core, and halve the pear.
2. Poach the pear halves in wine until tender. You should be able to stick a fork all the way in.
3. Cool the pear halves.
4. Plating: one pear half, a burratta ball. Drizzle balsamic vinegar glaze over the top, then sprinkle some kosher salt across the top.
