Experimental Cooking! Maneet Chauhan's Poached Eggs
I ran across this trick last night whilst watching
Kelly's cooking shows. Basically, it's a sous vide-ish method of cooking poached eggs. What will you need?
Eggs
Plastic wrap (pieces should be ~4" per side or a bit larger)
A small juice glass
Oil
A basting brush.
Pot/pan with boiling water.
Slotted spoon
1. Put a square of plastic wrap in to the juice cup. You're using it as a form. Drape over the outside.
2. Dribble some oil i to the lined cup, and brush up the sides.
3. Crack an egg into the resulting pouch. Season to taste.
4. Gather up the sides/corners, and twist shut, forming a small pouch.
5. Make all your eggs. THEN put into the hot water to cook.
6. We tried both 4 and 5 minutes. In the picture above, the rear was 4 minutes, the front 5. So that's pretty much your sweet spot to get runny eggs. I would suggest in the middle - 4:30.
